Month 10 (December): Mature Harvest! The lush tropical reed foliage begins yellowing and dying back naturally. Stop watering for 2 weeks prior to harvest to let skins cure. Gently tip the crock or loosen the sandy mix with your hands to harvest massive, pungent cluster hands.
