The Physics

The hexagonal pattern arises from Rayleigh-Taylor instabilities at the interface between fluids of different densities, modulated by viscosity contrast and Marangoni (surface tension) effects. Any thick liquid — corn syrup, dish soap, glycerin — produces the same class of cellular pattern when poured over water. The honeycomb shape is a property of the fluid dynamics, not of honey
