The Science Behind the Dexerto Report: Lone Star Tick & Alpha-Gal

The Lone Star tick transmits galactose-alpha-1,3-galactose (alpha-gal), a carbohydrate found in most mammals. When bitten, the human immune system produces IgE antibodies that react severely to beef, pork, and lamb. Because ostriches are ratites (flightless birds), their meat contains zero alpha-gal carbohydrates while matching the color, iron density, and savory texture of high-grade beef loin.

The saved example multiplies three hundred pounds live weight by forty-five percent meat yield, giving one hundred thirty-five pounds meat per bird. It separately multiplies the live weight by entered feed conversion three point five, giving one thousand fifty pounds modeled feed per bird. Both bars use half a pixel per pound with a common zero, but their meanings differ: output meat and input feed. These are source assumptions, not validated farm performance, nutrition evidence or allergy advice. With the same one hundred thirty-five pounds meat per bird, four hundred twenty birds give fifty-six thousand seven hundred pounds. A hypothetical fifteen birds with other inputs unchanged gives two thousand twenty-five. Both totals use point zero zero eight pixels per pound. The actual Backyard preset also changes weight and yield, so its meat total differs from this isolated herd-size illustration. The code rounds herd times per-bird meat before computing revenue. Fifty-six thousand seven hundred pounds times entered eighteen dollars fifty cents gives one million forty-eight thousand nine hundred fifty dollars gross revenue. Four hundred twenty birds times three hundred pounds times feed conversion three point five times thirty-five cents gives one hundred fifty-four thousand three hundred fifty dollars feed cost. Subtracting gives eight hundred ninety-four thousand six hundred dollars margin over feed only. Bars use point zero zero zero five pixels per dollar. Labor, land, losses, processing and other expenses are excluded, so this is not net profit or a price forecast. Nutrition and water comparison constants remain unverified saved fixtures.
