155°F PME Enzyme Bath

Pectin Methylesterase (PME) activates between 120°F and 160°F. Holding firm vegetables at 155°F for 30–60 min strengthens calcium-pectin crosslinks, making them resistant to collapsing even during subsequent vigorous cooking.

180°F Sogginess Threshold

Above 180°F, cell-wall hemicellulose and pectin dissolve rapidly into water unless reinforced. Acidic environments (e.g. 1 tbsp vinegar/qt of water) lower the rate of thermal breakdown, preventing mushy over-softening.
