1. The Reduction Trap

Never salt a long-simmered reduction or pan sauce to final taste at the beginning. As liquid steams off, concentration spikes exponentially. Season stocks lightly early on, then dial in final taste at plating.

2. The Kosher Brand Divide

Morton and Diamond Crystal are not interchangeable. Morton is nearly 70% denser than Diamond Crystal. Using Morton 1:1 in a recipe formulated for Diamond Crystal is the single most common cause of spoiled holiday roasts.

3. Osmotic Dry-Brining
